5 Surprising Foods That May Sabotage Your Thyroid Health

Updated: Nov 30

Is your healthy diet working against your thyroid gland?

Many plant foods we think of as healthy contain molecules that can disrupt hormonal and metabolic balance, particularly affecting the thyroid gland. The thyroid, a small butterfly-shaped structure at the base of the throat, plays a crucial role in regulating metabolism by producing thyroid hormone, which is essential for nearly every cell in the body. When the thyroid gland struggles to produce enough hormone, it can lead to hypothyroidism, a condition characterized by fatigue, weight gain, and other metabolic issues.

A little-known risk factor for hypothyroidism is the consumption of dietary goitrogens—natural substances found in certain plants that can interfere with thyroid function. Below, we’ll explore five goitrogenic foods that may contribute to hypothyroidism and how to manage their impact.

1. Soy

Soybeans contain goitrogens called genistein and daidzein, which reduce the activity of thyroid peroxidase, an enzyme crucial for thyroid hormone production. Clinical evidence shows that soy can cause hypothyroidism and goiter, especially in infants, children, and adults who consume it regularly. For those with borderline hypothyroidism, soy consumption can exacerbate the condition, leading to full-blown hypothyroidism.

Tip: Consider reducing or avoiding soy products, especially if you are at risk of or already have hypothyroidism. Cooking soy does not destroy these goitrogens, so simply heating your soy foods won’t mitigate the risk.

2. Cassava

Cassava is a staple food in many parts of the world, but it contains goitrogens that can interfere with iodine uptake, essential for thyroid function. When cassava is not properly prepared, it generates cyanide, which the body converts into thiocyanates, compounds that hinder iodine absorption and thyroid hormone production.

Tip: If consuming cassava, ensure it is peeled and thoroughly boiled to remove harmful compounds. Also, consider iodine supplementation if cassava is a significant part of your diet.

3. Cruciferous Vegetables

List of cruciferous veggies

Cruciferous vegetables like broccoli, cauliflower, kale, and Brussels sprouts contain thiocyanates that can disrupt thyroid function, especially when eaten raw. Rutabagas and turnips, in particular, contain a potent goitrogen called goitrin, which can lead to goiter even with adequate iodine intake.

Tip: To reduce the impact of these vegetables on your thyroid, cook them before consumption. Cooking helps lower the levels of goitrogens, making them safer for those with hypothyroidism.

4. Millet

Millet, a grain commonly used in gluten-free diets, contains goitrogenic flavonoids that reduce thyroid enzyme activity and interfere with thyroid hormone in the bloodstream. Unlike other grains, cooking does not eliminate these goitrogens.

Tip: If you have hypothyroidism, consider limiting or avoiding millet in your diet. Opt for other gluten-free grains that are less likely to impact thyroid health.

5. Onions

Onions contain quercetin and propyl disulfide, both of which have goitrogenic effects. Quercetin can reduce the activity of thyroid enzymes and hinder the activation of thyroid hormone in the liver. While onions are rich in nutrients, their goitrogenic properties may pose a risk for those with thyroid issues.

Tip: Boiling onions can reduce their quercetin content, making them less likely to interfere with thyroid function. However, if you have hypothyroidism, consider moderating your intake.

Foods to Avoid or Limit with Hypothyroidism

In addition to the goitrogenic foods mentioned, it’s essential for individuals with hypothyroidism to be mindful of other dietary factors:

  • Gluten: Particularly for those with Hashimoto’s thyroiditis, gluten can trigger inflammation and worsen thyroid function.

  • Sugary and Processed Foods: These can lead to weight gain and exacerbate fatigue.

  • Fatty Foods: These may interfere with the absorption of thyroid medication.

  • Caffeine and Alcohol: Both can disrupt the absorption of thyroid medication if consumed too close to medication time.

  • High-Fiber Foods: While generally healthy, too much fiber can interfere with medication absorption.

The Bottom Line

Managing hypothyroidism through diet involves being mindful of foods that can exacerbate the condition. While onions, garlic, and other foods offer numerous health benefits, those with hypothyroidism may need to be cautious about their consumption. Reducing intake of goitrogenic foods, maintaining a balanced diet rich in nutrients, and avoiding dietary pitfalls can help support optimal thyroid function and overall health.
